Acid Reflux Diet Recipes: Starters: Butternut Squash Soup

Acid reflux can be an uncomfortable condition to live with, leaving many people feeling as if they either have to suffer the pain and discomfort which it causes, or resign themselves to eating bland and dull food.

But being on an acid reflux diet doesn’t mean robbing yourself of all the joy of eating and drinking delicious meals – in fact, with a little planning, you can prepare fantastic meals that taste great, and leave you feeling comfortable too.

Whether you’re planning a multi-course dinner, or looking for a light meal or a snack, starters are a great way to start trying out acid reflux diet recipes.

Butternut Squash Soup

 Delicious in any season, butternut squash soup makes a flavoursome starter,  with delicate hints of thyme and nutmeg giving a fragrant touch to its beautiful colour.

Best of all, it’s incredibly simple to prepare, with only a handful of ingredients. Don’t be fooled by how straight forward the recipe seems though – while it takes very little effort to make, it’s a real showstopper and is also delicious as a leftover.

Enjoy this soup on its own as a starter, or combine with a whole wheat or gluten-free roll for a hearty lunch.

 

Ingredients: 

–       1 large butternut squash (approximately 800g)

–       ½ tsp sea salt

–       ½ tsp dried thyme

–       pinch of ground nutmeg

–       fresh ground pepper to taste

–       3 cups of water

Method 

  1. Prepare the butternut squash by cutting into small chunks or cubes. Place them in a steamer over 3 cups of water, and cook until softened – around 20 to 30 minutes. Remove from the steamer.
  2. Add the cooked squash chunks to the water used to steam the vegetables, and add herbs and seasoning. Blend through using an electric mixer, until the consistency is smooth.
  3. Season to taste. Continue to simmer, and add extra water if you prefer a thinner consistency.
  4. Serve the soup by itself as a starter, or with a roll.
