Butternut Squash Soup
Delicious in any season, butternut squash soup makes a flavoursome starter, with delicate hints of thyme and nutmeg giving a fragrant touch to its beautiful colour.
Best of all, it’s incredibly simple to prepare, with only a handful of ingredients. Don’t be fooled by how straight forward the recipe seems though – while it takes very little effort to make, it’s a real showstopper and is also delicious as a leftover.
Enjoy this soup on its own as a starter, or combine with a whole wheat or gluten-free roll for a hearty lunch.
Ingredients:
– 1 large butternut squash (approximately 800g)
– ½ tsp sea salt
– ½ tsp dried thyme
– pinch of ground nutmeg
– fresh ground pepper to taste
– 3 cups of water
