Recipe: Seafood salad |

55g squid
110g cooked mussels
25g prawns
1 tomato
½ small onion
¼ garlic clove
1 tsp white wine vinegar
1 tsp fresh parsley
½ tbsp white wine
Salt and pepper |
- Thinly slice the squid and cook in a pan of boiling water for 2-3 mins. Then leave to drain
- Peel the prawns
- Click the tomatoes and onion
- Crush the garlic clove
- Mix all the ingredients
- Season with salt and pepper

- 450g minced, cooked, chicken meat
- 1 egg
- 1 onion
- 1 garlic clove
- 1 tbsp fresh parsley
- 1 tbsp olive oil
- Salt and pepper
- Pre-heat the oven to 180oC (350oF, Gas Mark 4)
- Beat the egg and mix it with the chicken
- Crush the garlic and add it, with the parsley to the chicken/egg mix
- Gently heat the oil in a frying pan and fry the onion (sliced) for a few minutes
- Add the onion to the chicken mixture and stir
- Form the mixture into patties and bake in the oven for 15-20 minutes
- Turn the patties over after about 8 minutes

- 175g haddock (skinned and fileted)
- 75g brown rice
- 1 hard-boiled egg
- ½ green pepper
- 2 tbsp yoghurt (natural)
- 1 small onion
- Salt and pepper
- Poach the fish in water using shallow pan for about 10 minutes
- Remove the fish and flake it
- Boil the rice in the same water (adding extra if needed) and drain it after cooking properly
- Chop the egg, green pepper and onion and mix with the fish, yoghurt, rice and parsley in the pan
- Heat the mixture gently and stir

Recipe: Liver with orange |

- 170g lambs liver
- 75g rasher of lean bacon
- 1 tbsp flour
- ½ green pepper
- Freshly ground pepper
- 1 small onion
- 1 tbsp oil
- 100 ml orange juice
- 1 orange
- Slice the onion, lamb liver, pepper and lean bacon
- Heat the oil in a pan gently for 3-4 minutes
- Season the flour with freshly ground pepper and mix with the liver
- Place the liver, bacon and pepper in the pan with the onion and fry for 1-2 minutes
- Add the orange juice and cook for a further 4-5 minutes
- Cut the orange into halves, and heat for 1 minute
- Serve the meat-mix with the heated orange
